Chilled Strawberry Soup

For our honeymoon, we went on a Mediterranean cruise. On this cruise, they served an amazing chilled strawberry soup as an appetizer on the “Lighter Choices” menu. The recipe for which I have not been able to find anywhere, regardless of my efforts. (I was one step away from emailing the cruise line’s chef to ask for the recipe!) After being somewhat disappointed by each recipe that I’ve found (good recipes, but they just don’t measure up to my expectations), I put some effort into the trial-and-error process of making my own. It’s surprisingly simple for something that tastes so great! 🙂

[Please note: This soup does not keep well when stored overnight. Only make as much as you will eat in one sitting. This recipe serves 2.]

STRAWBERRY SOUP

Ingredients:

  • 1 cup frozen sliced strawberries
  • 1/2 cup cold apple or orange juice
  • 1/2 cup vanilla fat free yogurt (“source” is one of the ones that doesn’t contain aspartame)
  • 3-4 tbsp vanilla frozen yogurt
  • 1 tbsp brown sugar
  • .5 ml (half a dash) ground nutmeg
  • 1/2 tsp ground cinnamon
  • 1/2 tsp vanilla extract

Method:

  • Blend all in blender or food processor. Serve well chilled.
