Vegetarian Meat-less Meatloaf with Roasted Cauliflower

One comfort food I’ve always enjoyed eating was meatloaf. However, with my attempt at cutting meat out of my diet, I obviously cannot eat meatloaf. After experimenting with a few items in the kitchen, I realized that kidney beans have a similar texture to raw beef when mashed. This made me VERY happy, and so I created my very own meat-less meatloaf to satisfy my craving. Here’s my recipe, but feel free to mix in different spices if you desire. I’ve also included my go-to recipe for a quick and easy side dish made with cauliflower. Enjoy! πŸ™‚
Vegetarian Meat-less Meatloaf with Roasted Cauliflower

  • 1 can kidney beans, drained and rinsed
  • 1/2 cup bulgur (fine to medium grade), soaked and drained
  • 1/2 cup bread crumbs
  • 3-4 cloves garlic
  • 1/4 red onion chopped
  • 1/2 cup tomato sauce
  • 1/2 tsp hot sauce
  • 1/2 tsp dried coriander seed
  • 1 dash of cayenne pepper
  • optional: 1 tbsp finely chopped fresh basil.
  • optional: 1-2 tbsp grated parmesan cheese.
  • Pre heat oven to 350 F.
  • Drain and rinse kidney beans, and mash in a bowl.
  • Add in all ingredients except the tomato sauce.
  • Mush together with your hands, and form into a loaf shape.
  • In a loaf pan, spread half of the sauce along the bottom.
  • Place the loaf in the loaf pan.
  • Spread the remaining sauce over the loaf, ensuring the loaf is fully covered with sauce.
  • Sprinkle a small amount of extra bread crumbs over the loaf (about 1 tsp)
  • Bake at 350 for about 25 minutes, check to make sure the sauce is not completely dried out. then turn up the heat to 375 and bake for another 10 minutes.
  • Remove from oven to cool for 2 minutes before serving.
  • Slice and serve like you would any other meatloaf!

Roasted Cauliflower In Mustard

  • 1 small-medium head of cauliflower
  • 1/4 cup unsalted butter, melted
  • 2 tbsp lemon juice
  • 1/4 cup mustard
  • 1 dash of cayenne pepper
  • Set oven to broil on high.
  • Remove the leafy parts of the cauliflower, and most of the stems, and discard.
  • Slice the cauliflower, and set aside.
  • In a large bowl, combine: butter, lemon juice and mustard.
  • Add the cauliflower, stirring the mixture onto the cauliflower ensuring the cauliflower is covered. Sprinkle with a dash of cayenne pepper if using.
  • Place the cauliflower in a greased baking dish (or PAM works too!) and broil on high for about 10-15 minutes. (The cauliflower will be golden brown/dark brown on some pieces when it is done.)
  • Optional: after about 10 minutes, sprinkle some grated cheese on top, and continue to cook for another 5 minutes until the cheese is fully melted.
  • Serve alongside my meat-less meatloaf, or along any other main dish you desire!
