French Toast Minis With Strawberries & Cream

For the first time ever, I’ve successfully made French toast! This is something that’s simple to a lot of people, I’m sure, but for me… No such luck! I’ve already put together an egg mixture that I love, but every time I would try to make French toast with it, the result would be some soggy mess that tasted like raw eggs… Not so appealing, eh? So I decided that this time I would try it out with a smaller loaf/baguette of multi grain French bread. {You can pick the stuff up at your local grocery store for less than $2 a loaf, and it turns out so much better with actual French bread instead of the bagged bread. I try not to eat a lot of bread, but I associate most bagged breads with sponge because I’ve been spoiled by going to bakeries like Cobs for bread. Or better yet, making bread at home. Fresh is best! But there’s not always time for that… I actually purchased a large loaf of freshly made French bread yesterday for $1.49. We’ve devoured almost half of the loaf, but I’m trying really hard to save some for French onion soup… That will be posted soon enough! 😉 } So using smaller pieces of bread, and with the help of a pastry brush to brush on the egg mixture instead of dipping the bread, I was able to make a tasty French toast breakfast for my husband and I on this lovely Easter weekend! 🙂 Here’s my recipe, enjoy! 🙂

This recipe makes 2 servings.

French Toast Minis With Strawberries & Cream

Ingredients:

  • 4 slices of French bread or 12 slices of a small baguette (any baguette works really well to do minis, but you can also use the full-sized bread. I used a multi grain baguette this time around. We had 6 small slices each.)
  • 2 eggs
  • 1/2 cup milk
  • 2 tsp brown sugar
  • 1 tsp cinnamon
  • dash nutmeg
  • 1 tsp vanilla extract
  • 1/2 tsp vanilla sugar + more for garnish
  • extra 2 tsp brown sugar set aside in a bowl
  • 1 cup thinly sliced strawberries
  • 3 tbsp strawberry cream cheese + 1 tsp brown sugar

Method:

  • In a bowl, mix the cream cheese with the 1 tsp brown sugar, and set aside to reach room temperature.
  • Spray a frying pan with cooking spray, or melt 1 tsp of butter over medium heat.
  • In a bowl, whisk the eggs and milk.
  • Whisk in the brown sugar, cinnamon, nutmeg and vanilla extract to the egg mixture.
  • Lay out each slice of bread on a plate, and with a pastry brush, brush a light coating of the egg mixture on each slice of bread. Flip over each piece, and brush another light coating on the backs of each slice. Sprinkle a dash of brown sugar and vanilla sugar over each slice.
  • Place each slice of bread on the frying pan, sugar side down, and cook on medium heat for 5-10 minutes (depending on how well-cooked you want your toast), checking the undersides of each slice after 5 minutes to ensure they are not burnt.
  • Sprinkle the tops of each slice with a dash of brown sugar and vanilla sugar, and flip over. Cook on this side for the same amount of time as you cooked on the first side.
  • Lay each slice of toasted bread onto the plate.
  • Microwave the cream cheese mixture for about 10 seconds. You want a liquid cream consistency. Stir the mixture well.
  • Put a little bit of the cream cheese mixture over each of the pieces of toast, then add a couple of slices of strawberries on top. Apply more of the cream cheese mixture, then another strawberry slice if you wish.
  • Garnish the plate with more sliced strawberries until they are all used up. Sprinkle the whole dish with a dash of vanilla sugar.
  • Serve right away, with or without maple syrup.
